- Overall Management of Cutting tables pertaining to movement
of Personnel according to Production needs, maintaining a
proper flow of meat to maximize utilization of resources,
Implementation of all USDA, HACCP Regulations
- Monitor Product fabrication as to conformance with product
and Customer specifications
- Monitor all Machine utilization in order to maximize
- Supervise Personnel assigned as to compliance with Job
Requirements and internal Rules and Regulations.
- Proper cutting/ trimming / scrapping and boating of various cuts of
meat as to conform with specifications and maximize presentation.
- HACCP in plant training, USDA guidelines and regulations.
- Quality standard controls for all products and production lines.
