12 Aug Hollis Wilder’s “Savory Lamb Pastries”
Stuffed turnovers filled with sweet or savory ingredients which are then baked or fried delight cultures around the world. They are affectionately known as empanadas, pastelillos, pastelitos, empanadillas, or croquettes.
Taking her inspiration from a traditional Brazilian recipe, Hollis Wilder–chef to Hollywood stars, acclaimed cookbook author and winner of TVFN cooking contests– “reinvented” the traditional meat-filled turnover with one that features our robust American lamb.
“I love these pastry pockets,” says Hollis Wilder, “because the fresh lamb mingles with sweet and savory ingredients for a real burst of flavor. They can be served as a small plate or appetizer with other dishes or, just add a salad, and you have a meal. The food philosophy behind my book, Savory Bites, is that small portions make it easier to avoid overeating, and they are also perfect for making ahead of time and freezing for the week in single- or family-size portions.”
