Grilled Citrus Veal Chops

Ingredients

2 Cedar Springs Veal Chops

1 Tablespoon garlic salt

1 Tablespoon black pepper

1 Tablespoon zest of lime

1 Tablespoon zest of lemon

2 Tablespoon minced fresh parsley

1/4 cup butter

1 blood orange, sliced

Directions

  1. Pre-heat grill to 400 degrees F for direct cooking.
  2. Allow butter to soften at room temperature while pre-heating grill.
  3. Season veal chops with garlic salt and black pepper on each side.
  4. Mix citrus zest and minced parsley with butter.
  5. Grill over direct heat 4-5 min per side turning occasionally.
  6. Divide herb butter and finish with a dollop on each veal chop allowing butter to melt and veal to rest for up to 5 minutes.
  7. While meat is resting grill 1-3 blood orange wheels for up to 90 seconds per side. Plate veal chops with grilled blood orange wheels as an edible and conversation-evoking garnish.
