Grilled Savory Butterflied Leg of Lamb Recipe

   8-10 SERVINGS    20 MINUTE PREP TIME     2 HOUR MARINATE TIME      30-40 MINUTE COOK TIME

Ingredients

3 to 4 pounds Cedar Springs or Shepherd’s Pride lamb leg, butterflied
1 tablespoon paprika
1 tablespoon coarse garlic salt
1 tablespoon ground cumin
2 teaspoons dry mustard
2 teaspoons ground pepper
2 teaspoons brown sugar, packed
1/2 teaspoon cayenne pepper

Directions

  1. In small bowl, blend paprika, garlic salt, cumin, dry mustard, pepper, brown sugar and cayenne. Rub seasonings onto lamb. Cover, refrigerate and marinate for 2 hours.
  2. Grill lamb over medium coals or medium heat gas grill grate; covered; turning frequently 8 to 12 minutes until desired doneness. Medium rare cook to 145F, medium cook to 160F, for well-done cook to 170F.
  3. Remove lamb from grill and tent with foil to rest for 10 minutes; slice lamb crosswise at a diagonal slant and serve.

 

Broiling:

  1. Set oven for broiling; preheat for 10 minutes.
  2. Season or marinate lamb with herbs or spices, as desired. Place lamb on rack or broiler pan. Position rack/broiler pan and lamb 2-3 inches from the heat.
  3. Broil, turning occasionally 8 to 12 minutes until desired doneness. For medium rare cook to 145F, for medium cook to 160F, for well-done cook to 170F.
