Middle Eastern Spiced Lamb Sliders with Cucumber Sauce

Ingredients for Lamb Sliders

1 pound ground Cedar Springs or Shepherd’s Pride lamb
1/4 cup onion, finely chopped
1/4 cup red bell pepper, finely chopped
1 tablespoon fresh parsley, finely chopped
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
1 clove garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
Pinch ground coriander
Pinch red pepper flakes (optional)

Directions for Lamb Sliders

  1. Combine lamb, onion, red bell pepper, parsley, cumin, oregano, garlic, coriander, red pepper flakes (if using), salt and pepper in a large mixing bowl. Mix gently.
  2. Divide lamb mixture evenly into 8 balls and shape into small patties. Heat grill or broiler to medium-high heat. When hot, add the sliders and cook on each side for about 3-4 minutes, or until the internal temperature is 160 degrees F.
  3. Remove lamb sliders to a platter and keep warm. Toast slider buns.
  4. To assemble sliders, line up toasted bun bottoms on a platter. Spread about 1-2 tablespoons of cucumber sauce onto each bun bottom, top with lamb slider, a few baby spinach leaves and then the bun top. Secure with toothpicks, if desired. Serve immediately.

Ingredients for Cucumber Sauce

3/4 cup plain Greek Yogurt (nonfat or 2%)
1/2 cup reduced-fat sour cream
1/2 cup English cucumber (well drained of liquid), peeled and finely chopped
1 clove garlic, minced
1 tablespoon mint or parsley, finely chopped
salt and pepper, to taste

Directions for Cucumber Sauce

  1. Combine chopped cucumber, Greek yogurt, sour cream, garlic, salt and pepper, and mint or parsley in a small bowl.
  2. Store in refrigerator while you prepare the lamb sliders to allow the flavors to meld.

Toppings

2 tablespoons fresh mint or parsley, chopped
8 slider buns
1 cup organic baby spinach leaves
