Smoked Pulled Lamb Sandwich

Ingredients

3 pounds Cedar Springs or Shepherd’s Pride butterflied leg of lamb
1 tablespoon salt
1 tablespoon pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon basil
1 tablespoon oregano
6 cups sliced tomatoes
6 cups sliced cucumbers
3 cups onion
1 Dutch crunch roll
Garlic aioli, to taste

Directions

Rub the lamb with kosher salt, pepper, garlic powder, onion powder, paprika, basil, and oregano. Place in smoker and smoke for 1 1/2 hours.

Slice the lamb and serve on a Dutch crunch roll with tomato, cucumber, onions and garlic aioli.
